Mike Pearson tells listeners about the life of Dr. Roger Mandigo and his contribution to the farm business world.
Dr. Roger Mandigo dedicated 45 years to advancing meat processing and technology at the University of Nebraska-Lincoln.
He passed way last month at the age of 84 in Lincoln, Nebraska.
Mandigo's research on restructured meat paved the way for products like deli ham, McRib and chicken nugget countless processed meats. These products enhanced profitability for many meat companies.
His work on the poultry sector was profound.
The frozen chicken market reached $22.2 billion in 2022 and is projected to reach $46 billion by 2032.
The chicken nugget sector owes it's success to Mandigo.
He helped to come up with convenient reach products through his innovation.
Through Mandigo's career, he mentored master students and 22 doctoral students.
He also taught classes globally to ensure what he knew reached the next generation and received many awards for his work in the industry and secured 170 research grants.
Mandigo was known to be an influential man in meat research and innovation.
He grew up in Pal Mona, California and is survived by his wife of 54 years, Wanda, three children, six grandchildren and his sister.
