There has been a great deal of chatter within the beef industry over the differences in nutrient density between grass-fed and grain-fed beef and the effects on human health.

Many producers of grass-fed beef are claiming their way of finishing cattle provides nutritionally superior beef. Meanwhile, ranchers raising calves destined for grain finishing programs are wondering why their grass-feeding brethren are systematically condemning conventional cattle feeding practices.

Stephen Smith, Ph.D., a retired professor of meat science at Texas A&M University, is regarded as a global expert in fatty acid profiles in beef.
